Series 2

Barrel-Aged Saison with Brett, Lemon, & Lime

This beer is a blend of barrel aged and fresh beer. 4 strains of brettanomcyes, including one isolated from Ontario wineries were used to develop a Belgian pale ale in red wine barrels. 4 of the barrels were refilled without being rinsed after we removed beer for our Series 1 blend last year, lending depth, complexity and a sense of continuity. Two barrels had lemon peel and juice added, one had lime juice and peel added. The result is a beer with layers of funk, citrus flavours and acidity. It will continue to develop in the bottle for 2+ years.
